Chicken in hot & Sour sauce
YOU WILL NEED:
1tbsp light soy sauce
1tbsp oyster sauce
1tbsp sugar
1tbsp chilli sauce
1tbsp tomato ketchup
60gm boiled chicken
1tbsp garlic
2tbsp vegetable oil
TO MAKE:
Mix the soy sauce, oyster sauce, sugar, chilli sauce, and ketchup to make the sweet and sour sauce.
Add the chicken and garlic to the sauce.
On low heat, pour the oil into a wok. Add the sauce and cook until the chicken is, well, cooked.

Poached Pears
YOU WILL NEED:
2 cups red wine
1/2 cup water
1/2 cup orange juice
2/3 cup sugar
1 cinnamon stick
1 star anise
1 tsp vanilla extract
4 pears
TO MAKE:
Pour wine, water, and juice in a saucepan. Add sugar, cinnamon stick, star anise, and vanilla extract.
Mix well and bring to a boil while stirring. Reduce the heat slightly and simmer for about 10 minutes.
Meanwhile, peel the pears. Or halve them, removing the pit. Leaving pears whole makes for a better presentation, but halving it is more practical.
Place the pears in a pan, and cover with the sauce. Let them cook 10-12 minutes on low heat.
Carefully remove pears. Serve with cake, whipped cream, icecream... or as is, with a drizzle of the syrup.

Fresh Tagliatelle pasta
YOU WILL NEED:
500gms tagliatelle pasta
200ml creme fraiche/
heavy whipping cream
1 large lemon
2tbsp olive oil
Few leaves of Basil
Salt and pepper
A few shavings of Parmesan cheese
TO MAKE:
Boil the tagliatelle till al dente (4 minutes max).
Bring creme fraiche to a boil, and add juice of a large lemon (or 2 small ones).
Add Parmesan, bring to a boil, turn the heat off and mix in the tagliatelle.
Add salt and pepper, to taste, and decorate with big, leafy basil.

YOU WILL NEED:
2 cups steamed white rice
Half carrot, julienned
4 shiitake mushrooms, thinly sliced
1 cup spinach
A handful of soya sprouts
Half a zucchini, sliced
2tbsp dark sesame oil
1tsp sesame seeds
One egg
1/2tbsp Korean red pepper paste,
aka Gochuchang
Soy sauce and salt, to taste
To make
Saute all the veggies separately in sesame oil, and place them on a paper towel to absorb excess oil.
Fry one egg, sunny side up.
Place rice on a bowl, and set the sauteed vegetables on the side of the plate for better presentation.
Put the egg on top of the rice. Follow with a sprinkling of sesame seeds and a drizzle of sesame oil and soy sauce.
Once ready to eat, add the red paste and salt, and mix all ingredients. The dish should be moist. If it feels a bit dry, add some more sesame oil.
