Recipe, Lemon Bars Recipes for high tea

Preparation Time: 30 minutes
Cooking Time: About 45 minute
Makes: 16 squares
Ingredients:
1 cup flour
100gm softened butter
1/4 cup powdered sugar
2 eggs
1 cup granulated sugar
2tsp grated lemon peel
2tbsp lemon juice
1/2 tsp baking powder

Method:


1. Heat the oven to 180oC.

2. Mix the flour, butter and powdered sugar to form a wet-sand like mixture. Press into an ungreased square pan 8x8x2-inches, building up 1/2 inch edges. Bake for 20 minutes.

3. Beat remaining ingredients until light and fluffy. Pour over the crust.

4. Bake until no indentation remains when touched in the centre, about 25 minutes. Cool. Cut into squares.

Each serving: 85.5 calories, 1.7gm protein, 7.3gm carbohydrate, 5.8gm total fat (3.4gm saturated), 0.8gm fibre, 33.9mg cholesterol, 8.0mg sodium.
